Vegetable Pulav (Tharakari masale Anna)










 Ingredients

1 cup rice (Akki)
1 large onion (Erulli)
1 potato
2 carrots
15 green beans

Masala

1/2 cup fresh or frozen shredded coconut (kayi thuri)
1/2 onion (erulli)
1 to 1 1/2' inch ginger (shunti)
10 to 12 green chillies (hasi menasu)
1 tsp cumin (jeera)

Seasoning
1 to 1 1/2 tbsp oil (enne)
1 tsp mustard seeds (sasuve)
1 stalk curry leaves (karibevu)
2 tsp chopped garlic(belluli)
4 to 5 clove (lavanga)
2 to 3 whole cardamom (elakki)
6 to 8 black pepper (kalu menasu)
1 to 1 1/2 inch cinnamon (chakke)
Salt to taste

Method
Wash the rice put it aside. Slice the onion, potato, carrot and beans put it aside. Then make the masala, in a blender add coconut, onion, ginger, green chillies and cumin with little water blend together until smooth paste(masala finished). Pour oil in a pressure cooker pan and place it on the stove top. When oil heats up add mustard seeds, curry leaves, cloves, cinnamon stick, black pepper, cardamoms and stir it. Now add the  onions fry until pinkish brown, then add garlic, stir it, then add potato, carrot and green beans stir it for few seconds then add washed rice stir for two minutes, now add the ground masala and fry until raw smells(smell of onions) goes away. Then add salt and 2 to 2 1/2 cups water, cover the pressure cooker. Cook until 1 to 2 whistles.Take off from the stove and let it cool. Your pulav is ready to eat.
Serve with raitha.
